Coconut Milk

Suitable for a: vegan diet
Ingredients:

1 mature coconut
water from 1 mature coconut
spring water
8 pitted honey dates
Instructions:

Drill hole in mature coconut and drain any coconut water into a measuring cup. Strain coconut water to remove any bits from the drilling process. Pour coconut water into the Vita-Mix or blender. Add enough spring water so you have at least 2 cups of fluid. Now seperate the coconut meat from the husk. To do this, you need to start by cracking open the coconut on a hard surface. I usually go outside and crack it open on a rock. You then take all the coconut pieces and use a cleaver to cut the pieces loose from the husk. You cut towards the edge of the large pieces and then twist the cleaver after you have cut through and the coconut meat will seperate from the husk. It takes a little practice, but once you figure out a technique that works for you, it should be a fairly efficient process. The coconut meat will have some brown skin on the side that was against the husk and this is totally ok. Now skin is one thing, the husk is another, so make sure you have no hard pieces stuck to the coconut meat. Ok, now add the coconut meat to your Vita-Mix or blender. Vita-Mix on maximum speed until fully blended. A Vita-Mix really helps with this, but you can just make do with what ever blender you have. After it is fully blended, then strain through a nut milk bag/paint strainer bag/strainer/etc.. Now pour the strained mixture back into the Vita-Mix and then add about 8 pitted honey dates. Blend again and then strain again as before. Take the strained mixture and pour into a container and chill. This will be the best coconut milk you have ever had.

Please do not confuse a mature coconut with a thai coconut or young coconut. This recipe requires a mature coconut (the traditional brown coconuts with a hard shell). This recipe is a raw vegan recipe suitable for a raw foodist, vegan or vegetarian or anyone who just likes a nice glass of cool creamy coconut milk.
