Wheat Bread/ Raisin Bread
Category: Breads

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

3 1/2 cup whole wheat flour
1 cup water
1/4 cup oil
1/4 cup maple sryup
2 tsp salt
1/4 cup soymilk
2 1/2 tsp yeast dissolved in 2 tbsp warm water

Raisin Bread Ingredients

1/2 cup raisins
brown sugar or maple sugar
cinnamon


Instructions:
------------------------------------------------------

combine all ingredients together in a large mixing bowl and knead with oiled hands until smooth, about 5-8 minutes. Add additional flour if the dough becomes too sticky to handle. Cover the dough and let it rise for an hour.

For raisin bread (if only making plain wheat bread, skip this step)
roll out dough on an oiled surface (important, so it won't stick to your work surface). It should be a long slab 8 inches wide. Mix together brown sugar and cinnamon and sprinkle it evenly on the dough, to taste (sweeter bread, add more sugar mixture). Evenly sprinkle the raisins, and gently press them into the dough. Roll the dough and pinch the seams to create a loaf.

Place in a loaf pan, loosely cover with plastic wrap, and let it sit for an hour. Bake in a 375 degree oven for 20 minutes, covered with aluminum foil, and an additional 20 minutes, uncovered.

Slice and enjoy!

Thanks for posting this! I've been searching for a great vegan bread recipe, and this definitely looks like the answer to my prayers. I'm going to give it a try tonight- I'll let you know how it goes. :D

How are you supposed to get it to rise? I let it sit for an hour, and I didn't see a change in the dough (maybe it rose a little, but for all I can tell it didn't). How long should I wait before I throw the dough out? I kneaded it for 8min... maybe I didn't add the yeast correctly?

I've made that mistake many times, and ended up with a brick that I could barely slice through.

Soy milk does not contain the proper acids to react with the yeast to make it rise. Cow's milk has this acid. What you can do instead, is put a couple drops of lemon juice in when you mix everything up. That way the yeast will have an acid to react with.

Just made this bread, and used molasses in place of the maple syrup. Molasses substitutes very well, and is more natural.
