jenna was looking for a low fat dip for her jicama sticks. So I thought this might be a good time to reveal my "500 Island Dressing".

500 Island Dressing Recipe
1 C soaked raw handshelled cashews
3/4 C spring water
1/2 red bell pepper, diced
1 lemon juiced
1/2 t zested garlic
1/2 t zested onion
1/4 t grey celtic sea salt
1 T fresh minced basil
1 T fresh minced dill weed
1 habanero, finely diced (optional)

Instructions: Place the cashews, spring water, red bell pepper, lemon juice, garlic, onion, habanero, and grey celtic sea salt in the blender and process until smooth and creamy. Add the basil and dill weed and then Vita-Mix on variable speed setting "1" just to mix. If you don't have a Vita-Mix, just pulse your blender to mix. At completion, add more salt to taste. The sea salt is important and it does bring out the flavor. You may also want to add some fresh cracked pepper and maybe a dash of cayenne.

Substitutions:
1 C soaked raw handshelled cashews = any soaked cashews
3/4 C spring water = tap water
1/2 red bell pepper, diced = 1/4 cup dried bell pepper
1 lemon juiced = lemon juice concentrate
1/2 t zested garlic = garlic powder, or just crushed garlic
1/2 t zested onion = onion powder, or just finely diced onion, or leave it out
1/4 t grey celtic sea salt = any unrefined salt
1 T fresh minced basil = dried basil or use any dried herb
1 T fresh minced dill weed = dried dill weed or use any dried herb
1 habanero, finely diced (optional) = this is only for the manly version

NiniJan, I am glad your are excited about trying this recipe. Thanks for being so appreciative. I am always glad to give a recipe to anyone who is interested in adding more raw food choices to their diet. I thought this recipe would be great. I mean why ruin a nice healthy salad of fresh greens with an oily processed dressing loaded with refined salt and no telling what else.
