View Full Version : Easy (and cheap!) Dairy and Meat Substitutes

So many people have found recipes that they think would be great, only to find that the last ingredient is butter, eggs, etc. So, here is the thread to post substitutes! I have started a list (yes, some of mine have been taken from other threads, particularly http://www.veggieboards.com/boards/showthread.php?t=50342&page=2), and will add any substitute to the starting post (this one) for anything that people post! And, yup, this is for Challenge #5, but I was meaning to start one anyway, as I could not find a list on the first eight pages when I searched, none posted in since the end of 2005, so here it is!

Butter: Olive oil, soy margarine

Single WHole Eggs: whip 1/4 cup tofu, store bought egg replacers (ex. Ener-G brand), 2 tbsp water + 1 tbsp oil + 2 tsp baking powder, 1 tbsp ground flax seed simmered in 3 tbsp water, 2 tbsp water + 2 tsp baking powder

Single whole eggs in sweet dishes: 1 banana, 1/4 cup apple sauce

Egg Whites:1 tbsp plain agar powder dissolved in 1 tbsp water, whipped, chilled, whipped again

Large amounts of Egg (ex. in Quiche): Tofu

Ground Beef: TVP, Morningstar Farms Crumblers

Milk: Soy Milk, Rice Milk, Almond Milk

Honey: Molasses, "Just Like Honey" Rice Nectar, Maple Syrup, Barley MAlt, Brown Rice Syrup, Agave nectar, palm sugar (available in Asian stores)

Burgers: Boca Burgers, Morningstar Farms Burgers

I love veggie burgers, they are usually $4.00-$5.00 for 4 burgers. 4 meals for $5.00 is pretty good! Just add some veggies and you're set.

Good post!

You don't need to simmer the ground flax in water (egg replacer), just let it sit for 10 mins or so until it goes gloopy.

Chickpea flour (gram flour) can also be used as egg replacer in large quantities, like for an omelette.

I've found that if a recipe calls for an egg or two, you can just leave it out and it won't make a difference. I've done it with pancakes, cornbread, nutloaf (non-meat meatloaf), and... and... there was something I else I cooked this way, and now I can't remember what it was.

Search the Food Network site for the Split Pea Burger recipe. Best burgers I've ever had, veg*n or not. And the ingrediants are dirt cheap.

crumble silken tofu, add lemon juice, garlic and italian spices to replace ricotta/cottage cheese in lasagna/calzones/pieroges/etc...
