Quick and Simple Corn Fritters

Suitable for a: vegan diet
Ingredients:

100g (3.5oz) plain flour
1 tbsp cornflour
2 spring onions (shallots) chopped
175g (6oz) sweetcorn, off the cob (thawed if frozed)
50g (1.7oz or so) sundried tomatoes in oil, drained and roughly chopped
1/4 teaspoon cayenne pepper
2 tbsp sunflower oil
3/4 of a cup of water
salt & pepper to taste
Instructions:

1/ Sift the plain flour and cornflour into a bowl and gradually sitr in water. Stir in all remaining ingredients except the sunflower oil.
2/ Heat the oil and drop 2 tablespoons of misture into the pan and flatten slightly with the back of a spoon. Cook for 3/4 minutes on each side until golden brown. Repeat with the remaining mixture until it's all used up.

Very easy to make and very tasty. Lots of protein and quite filling.
All up takes about 15 mintues from start to finish. Serves four with a side salad.
