Rice and Gimme Lean Stuffed Peppers

Suitable for a: vegan diet
Ingredients:

1 package Gimme Lean - beef flavor
1/2 cup brown rice
1 cup water
1 small onion (or 1/2 larger onion)
chopped cilantro
chopped dill
4 bell peppers - two green and 2 red, thin skins if possible, cut in half lengthwise and seeded
1 large portabella mushroom or 1/4 lb small brown mushrooms, sliced
Instructions:

In a wok or large frying pan, brown the rice slightly in a small amount of canola oil, add water and cook gently until almost absorbed. Set aside.
In the same pan, brown onions in a small amount of oil and set aside in a dish. Using the same pan, brown Gimme Lean about five minutes, chopping with a spatula to crumble it.
Combine all ingredients except for the mushrooms, place peppers in a glass baking dish, and fill them to heaping. Brown mushrooms lightly in a little oil and top the peppers. Bake in 375 degree oven until the peppers are tender but still a little crisp.

Any color combination of bell peppers may be used. It doesn't have to be two green and two red.
