Oriental Cole Slaw

Suitable for a: vegan diet
Ingredients:

Salad:
1 package cole slaw mix
1 bunch green onions (chopped finely)
2 packages uncooked vegan ramen noodles (throw out seasoning packet)
3/4 cup sliced almonds
1 cup sunflower seeds
Dressing:
1/2 cup tarragon vinegar
1 cup sunflower seeds
3 tablespoons soy sauce
3/4 cup sugar
Instructions:

Break up ramen noodles and mix with the other salad ingredients.
Mix the dressing together and make sure that the sugar is dissolved in the vinegar and soy sauce. Pour dressing over salad just before serving, making sure that it is evenly distributed.

This salad is really good as a side dish, and I've brought it to parties with good reviews. I'm sure if you topped it with some marinated tofu that this could be a nice main dish.
The dressing has a nice balance between sweet and sour, and the nuts give it a nice crunch. I usually leave out the onions, and it goes fine.
I always use unsalted sunflower seeds and almonds, I'm not sure how the salt affects the flavor.
