Pasta Pea Casserole
Category: Main Dishes - Pasta

Suitable for a: vegan diet


Ingredients:

6oz (1/2 Package) of Wide Noodles
2 Cans of Tomato Soup
2 Cans of Peas
1/2 Onion, diced.


Instructions:
------------------------------------------------------

Preheat the oven to 350 degrees.
Boil the noodles and drain. Chop up the onion and drain the peas.
Combine all the ingredients in a casserole dish and bake for 30 to 60 minutes.

Very fast and easy recipe.

This was my mother's recipe for "Hamburger caserole" but she left out the hamburger when making it for me so we started calling it "Pasta Pea Casserole". I suppose you could add Boca Crumbles or equivelant, but I just like it better without the hamburger personally. Likewise add as much or as little onion as you want.

When my mom makes it she uses Egg Noodles, but I use a generic brand of whole wheat "No Egg Wide Noodles" which works just as good and is vegan.

I sprinkle ground flax seeds on it when it's done cooking which works great, and sometimes a little basil, but then again I add basil to nearly everything.
