Cream Filled Strawberry Mini Pies

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

FOR THE CRUST:
1/2 cup Earth Balance
1/2 cup sugar
1/2 tsp vanilla
1 cup flour
1/2 tsp baking powder
1/4 cup milk of your choice

FOR THE CREAM FILLING:
2 TB flour
3 TB sugar
1 cup milk
1 tsp butter
1/2 tsp vanilla

FOR THE FROSTING:
1/2 cup shortening (I used Spectrum Organics)
1/2 cup Earth Balance
1 cup powder sugar
3 TB milk
1/2 tsp vanilla

FRESH STRAWBERRIES


Instructions:
------------------------------------------------------

FOR THE CRUST:
Preheat your oven to 400 degrees (200 Celsius).
Manually mix the EB, sugar and vanilla.
Alternately add the flour (sifted with the baking powder) and milk to the EB mix.
Evenly press the dough into the bottom and up sides of 4 small tart pans and gently prick it with a fork.
Bake for about 12-15 minutes. Don't overcook it or it will be hard like a cookie, which isn't all bad anyway!

FOR THE CREAM FILLING:
Combine the flour and sugar in a small saucepan.
Add the milk, gradually and stirring constantly to prevent lumps from forming.
Cook over medium heat until it thickens, turn heat to low and cook for two more minutes.
Remove from heat, add the EB and vanilla.

FOR THE FROSTING:
Using an electric mixer, mix together the EB and shortening until they become lighter in color.
Keep mixing and alternately add the sugar and the milk.
Add the vanilla and mix for an extra minute.

PUTTING IT TOGETHER:
Pour the cream filling into the baked pie shells and let them cool completely.
Decorate the mini pies with the frosting and fresh strawberries.
Refrigerate it for at least an hour before diggin' in!

This makes 4 mini pies.
I used a 1M Wilton decorating tip for the frosting.
You can use any fruit other than strawberry! :pibo:
