Vegan Cream Cheese
Category: Condiments, Dressings, Spreads

Suitable for a: vegetarian diet


Ingredients:
------------------------------------------------------

1cup soft or silken tofu
1/4cup cashews
1-2Tbsp water or soymilk
2tsp. sugar
1tsp salt
1/2tsp. pepper

Tools:
*Kitchen towl
*Food processor or blender
*Small plastic container with a lid(for storage)


Instructions:
------------------------------------------------------

Drain Tofu, wrap in towl, and squeeze out excess moisture.
Place all ingredients in food processor/blender, and blend until smooth.
Taste to adjust: add more tofu/ water for a thicker/thinner consistency.
Add more sweetener/dash of lemon juice for a sweeter/less sweet flavor.
When the flavor is acceptable, transfer cream "cheese" to the plastic container,cover and-for best flavor- refrigerate over night.


Additional comments:
------------------------------------------------------

Use within 4-7 days.

For flavored cream "cheese":
use garlic, green onion,herbs,dried fruit(my favorite!), or sun-dried tomatoes.

I'll definitely have to try this...I have a recipe that MIGHT be pretty close to this, btu I'm really eager to try a homemade vegan "cheese" recipe...especially one for "cream cheese"!
