What is Stevia?

its a naturally sweet herb thats used by some people as a sugar subsitute, but doesn't contain any sugar compounds, so doesn't rot your teeth or affect your blood sugar :) .

it doesn't work the same way as sugar, because its not a sugar, its a herb, so for baking, things won't caramelise with it like they would with sugar, and it won't activate yeast in bread, etc- but its still useful- especially for things like adding a drop to your cup of tea! :)

its not legal in some places (like europe) but has been used widely for centuries in other places ( i think its even used in diet coke in japan!), and is available in the states and canada as a food supplement. i use it, and see it as a great alternative to sugars and artificial chemical sugar substitutes.

its available in a powder and liquid form, and is usually concentrated to be very sweet- often to the level that one drop = a teaspoon of sugar worth of sweetness, although you can also buy it premixed in a 1 to 1 ratio.

this is a classic. make sure you use silken tofu for the best texture. I use maple syrup to sweeten, but agave or brown rice syrup would work as well. you can also melt chocolate chips instead of using cocoa. it's a very versatile recipe, and makes a great pie filling. Omnis will never know they're eating tofu.

2 T water

I think it would be 2 Tablespoons.

T = tablespoon
t = teaspoon

OOoooh! My sister makes this with the low fat tofu for me. Awesome way to get some protien and cacium!

I have organic sugar, but I grind it in the coffee grinder to powder it. It's smoother that way.

This is awesome as a chocolate silk pie, just use a vegan crust and place bananas and strawberrys on top of the pudding. Chill that for a few hours and enjoy.

Great.. now I am hungry.

baking cocoa is chocolate? Can I substitue baking cocoa for some other ingredient? I can't eat chocolate.

Thanks.

We do this recipe too! We melt dark choc. chips instead of powder and use agave' nectar for sweetener. Good stuff!!!

I made this recipe yesterday and it was soooo good!
Thanks for sharing.
Now I'm thinking of trying a variation....strawberries or cherries in place of the cocoa.

I made this and it came out a bit funky the first time, so I think I did something wrong.. :P But I made it again and used raw sugar instead of stevia and melted some chocolate chips for the cocoa and I put it into a pie with bananas and strawberries mixed in.

It was verrry good. (: I shared with my best friend and her family (all picky eaters) and also with my family that is deathly afraid of tofu and they all loved it. I'm going to be making this for one of the vegan foods I let the class taste for a presentation I do on factory farming. (:

I just got some silken tofu so I think I'm going to try this. Will any baking cocoa work?

Carob. Though I don't know if they sell carob powder. I do know they sell carob chips.

I did this for Spiderman's birthday and used 3 oz melted chocolate, 3 TB each maple syrup and cashew butter and 1/4 cup cocoa powder. i put in in a crust made from digestive biscuits and WOW. it was so rich and creamy. You would never know there was tofu.

I'm a little hesitant because this recipe calls for 'firm' tofu instead of silken. Has anyone actually tried this with firm tofu?

i'd definately use silken tofu for anything dessert-ish. it does come in different consistancies though, there is firm-silken tofu in existance- its just a bit more solid than the usual stuff. perhaps the OP meant to use that.

yes, one should use silken firm tofu for this.

Okay, good; that's what I thought.

With cookie crust, it's a perfect chocolate tofu pie.

I bought it a few years back, after tasting the mixture I realized it was exactly the same so I made a crust and put the mixture on top, then store in the refrigerator.
