Cheeseburger macaroni
Category: Main Dishes - Pasta

Suitable for a: vegan diet


Ingredients:

3 1/2 cups macaroni noodles
1/2 cup vegan margarine (try earth balance)
1/2 cup flour
3 1/2 cups water
1 1/2 tsp salt
2 TBSP soy sauce
1 1/2 tsp garlic powder
1/4 cup extra virgin olive oil
a pinch of tumeric
1 cup nutritional yeast
paprika
1 pack veggie burger (I use boca ground meat...yum!)


Instructions:
------------------------------------------------------

Cook macaroni and set aside.

In a saucepan, melt margarine, add flour and beat with a wisk over medium heat until mixture is smooth. Add boiling water, salt, soy sauce, garlic powder, and tumeric. Beat well until flour mixture is dissolved.

Stir until thick and bubbly, then add oil and nutritional yeast.

Heat ground veggie burger in a frying pan with a little bit of oil.

Put noodles, sauce, and burger into a casserole dish, and sprinkle with paprika.

Bake 15 minutes at 350 degrees, serve.

Mmm!

Well, this looks different enough from the other Mac & "Cheese" recipes I have tried. I might just have to make this. I am on a mission to find one that is actually good.
I guess I was a pretty picky Macaroni and Cheese eater before, so I don't know why I bother trying to substitute.

I am a little weirded out about the soy sauce in this. Perhaps Bragg's instead, would make it more mild.

I made this for dinner tonight. It was very yummy! I put ketchup on top of mine b/c ketchup just makes everything great. It is tasty without the ketchup on top as well. I will definitely make this again.
