Simple Burritos

Suitable for a: vegan diet


Ingredients:

16-20 small-medium vegan tortillas
1 can refried beans
1 cup dried tvp
1 vegan taco seasoning packet
2 cups water, divided
1/4 cup nutritional yeast
2 tbsp. tapioca starch
1 tbsp. flour
1/2 tsp. salt
1 tsp. white vinegar
1/4 tsp. garlic powder
1/4 tsp. turmeric


Instructions:

Preheat oven to 450 degrees.

Boil one cup of the water, and mix it with the tvp and the taco seasoning in a large bowl or dish. Cover tightly, and set aside to rehydrate for 15 minutes.

In the meantime, make the cheez sauce. In a small saucepan, mix together the other cup of water, the nutritional yeast, the tapioca starch, the flour, the salt, the vinegar, the garlic powder, and the turmeric. Whisk until smooth over medium heat. When it thickens to about the consistency of pudding, remove it from the heat.

Combine the beans, the seasoned tvp, and the cheez sauce. Divide the mixture evenly into the tortillas, rolling each one up tightly burrito-style.

Bake at 450 on a cookie sheet until the tortillas are crisped on the outside and just starting to show a bit of light browning. Around these parts, it takes 10-12 minutes.

Serve with salsa, sour supreme, or your choice of dippers. These are even better the next day cold. The boys love them in their lunch instead of a sandwich!
