Vegan Chocolate (or Carob) Hazelnut Butter Pie

Suitable for a: vegan diet
Ingredients:

For the crust:
1 1/2 cups cookie crumbs
1/4 cup maple syrup
1 tbsp hazelnut or brazilian nut oil (or any other neutral-tasting oil)
For the filling:
1/2 cupand a little more silken tofu
3/4 cup hazelnut butter
1/4 cup + 2 tbsps vanilla soy milk
2/4 cup maple syrup
1/4 tsp salt
For the topping:
1/3 cup soy milk
3 oz of bitter chocolate or carob 'chocolate'
1/3 cup chopped walnuts or almonds (optional)
Instructions:

To make the crust, mix all the ingredients together and press into an oiled pie pan and bake for about 10 minutes at 180 C. Remove from oven and allow to cool.
Place all the filling ingredients in a food processor and blend until smooth. Pour filling into the crust and bake for 15 minutes at 150 C. Allow to cool.
Place chocolate or carob chocolate broken in pieces along with the soy milk in a saucepan in medium heat. Stir with a wooden spoon until smooth. Add chopped walnuts or almonds (optional). Pour over the pie filling. Allow to cool and then refridgerate for at least 2 hours.
