Couscous Fruit Salad
Category: Salad

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

1 mango
1 orange
1 apple (doesn’t matter what kind)
Grapes (however many you desire)
1 pineapple
You can add any other fruit you would like, but citrus seems to taste better with couscous
1 cup of couscous
Orange juice
Water


Instructions:
------------------------------------------------------

First pour the couscous into a medium or large. Then pour in enough water to cover the couscous. Couscous like rice will expand and all the water will be gone by the time it is ready. Then add about a couple of tablespoons of orange. This is gives the couscous some favor while cooking. Then cover the pot and stir occasionally. The couscous is done where there is not water left in the pot and the couscous looks fluffy. It should take roughly 5 to 10 minutes for the couscous to be fully cooked.

While the couscous is cooking start cutting up the fruit into small chunks, you want them small enough so you can eat them easily with the couscous. Once both the fruit and couscous is done pour the couscous into a large bowl and then add the fruit. Stir to mix everything together and serve as is. You can put it in the refrigerator and eat cool if you desire.

You can use more couscous and fruit for taste or if you are serving this at a party. Also try other fruits to see if they taste well with the couscous or if they do not work with it.

i have eaten couscous as main dish and i liked it...but i have never heard or seen it in salad... gotta try it!
