Whole Wheat Carob Brownies A La Mom

Suitable for a: vegan diet
Ingredients:

1/3 c rice flour
1 c whole wheat flour
1 1/2 t baking powder
1/2 t salt
1/3 c carob powder
3/4 c brown rice syrup
1/4 c apple juice or water
1/3 c oil
2t vanilla extract
1/2 c carob chips (optional)
1/2 c walnuts, chopped (optional)
Preheat oven to 350F. Mix dry ingredients. Add moist ingredients, stir until just blended. Add carob chips and nuts. Spread into 8 x 8 inch baking pan, bake for 25-30 minutes or until knife comes out clean. (I used a 9" round and baked for 22 minutes) Let cool. Enjoy! consume with coffee...
