My Mommies Mac n Cheese
Category: Main Dishes - Pasta

Suitable for a: vegetarian diet


Ingredients:

Medium pasta shells
3 extra sharp cheddar cheese blocks
Diced tomatos (fresh or from can)


Instructions:
------------------------------------------------------

Boil shells for 10 minutes or until done
Shred cheese, set aside in bowl
In large casserole dish layer drained shells (only use half, you'll use the other half later)
Layer cheese (about half or more) then tomatos (use as many as you like)
Repeat, pour tomatoe juice over top.
Bake in oven at 350 for 45 minutes or until light brown on edges.


Additional comments:
------------------------------------------------------

Using packaged shredded cheese will give it a greasier, thinner texture...so I don't recommend using it.

You can add other veggies too (to make it just a little better for you!)
Serves 6-8
