Spicy Spinach with black eye beans
Category: Side Dishes

Suitable for a: vegan diet


Ingredients:

Fresh/Frozen spinach - 16 Oz
Black eyed peas - 16 Oz
Cnion - 1 medium sized
Green/Red/Yellow Bell Pepper - 1 medium sized
Garlic paste - 1 Tbsp
Garam Masala - 2 Tsp
Cumin seeds- 1 Tsp
Hot Green chillies
Vegetable Oil
Salt to taste


Instructions:

Precook spinach in the microwave with salt until almost done. Cook the black eyed peas in a pressure cooker or on the stove with salt and water until almost done. The beans should not be mushy. Heat oil in a deep pan, add cumin seeds and let it sputter. Then add the finely chopped onions, garlic paste and chopped bell pepper. When onion turns transluscent, add finely chopped green chillies. Lower the heat, and then add the Garam masala. Add the spinach and a little water to cook it throughly. finally add the black eyed peas and mix well. Serve hot with tortillas or steamed rice.

Garam masala is available these days in any large grocery market with ethnic food or indian store.
