Amber Macaroni
Category: Main Dishes - Pasta

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

1/2 pound whole wheat macaroni
1/2 cup silk vanilla soymilk
1/2 cup Ragu 7-herb Tomato Sauce
4 TBl Red Star Nutritional Yeast
2 TBl Earth Balance or other vegan margarine
2 tsp Tofutti Herb & Chives Better Than Cream Cheese
2 tsp Basil
1/2 tsp Sea Salt or Mrs. Dash
1/4 tsp ground mustard
1 TBl cornstarch


Instructions:
------------------------------------------------------

Cook whole wheat macaroni as per instructions on box (approx. 12 min)
Turn off heat, Drain and return macaroni to pot on stove.
Pour in soymilk, tomato sauce and nutritional yeast. Stir over low heat. Add remaining ingredients and stir well.

Makes 4 bowls

Try plain (or sans) cream cheese, and add some salsa. :lick:

I don't know why vanilla soymilk makes vegan mac-n-cheese taste cheesier, it just does. At least for me. Weird, but true.

I figure hey, I'm mixing soy milk with yeast and spices already. How much weirder can it get? :p

I usually make pasta with yeast, unsweetened plain soy milk and spices so I don't think that is weird at all but I have to say I've never had a happy taste experience using sweet vanilla soymilk in savory recipes like mac and cheese or mashed potatoes :D

Hey I put down the exact ingredients that created the wonderful taste in my home. Using different ingredients than stated .. . will no longer be "Amber Macaroni"

Trust me I made this twice already and the second time I tried to see if certain ingredients could be left out.
ie.. used just the soymilk, tomato sauce and nutritional yeast - tasted it (no, not good enough)
Added just the vegan margarine (no, that's still not it)
etc..
