Brianna's Raspberry Banana Ice Cream Torte

Suitable for a: raw vegan diet
Ingredients:

8 frozen bananas
3 fresh bananas
1 8 oz jar raw almond butter
3 t vanilla
juice of 1 lemon
1 cup carob powder
2 cups dates, pitted
1 cup almonds
5 T honey or agave nectar
2 cups raspberries
dried coconut
Instructions:
------------------------------------------------------
In food processor, grind almonds to powder. While processor is running, add dates until mixture forms a ball ( usually takes about 1 cup). Add 1 tsp vanilla. Press into 8x8 square glass dish. Layer sliced fresh bananas over crust. In food processor, process 4 frozen bananas, carob, lemon juice, 1 tsp vanilla, all but 2 T almond butter, remaining dates, and 3 T honey or agave. Once smooth, layer over sliced bananas. Once again, layer sliced bananas over carob layer. In food processor, process remaining fresh and frozen bananas, 1 cup raspberries, 1 tsp vanilla, remaining almond butter, and remaining honey or agave. Once smooth, layer over sliced bananas. Sprinkle coconut over top and line edge of dish with remaining raspberries.

Store in freezer. When ready to eat, cut pieces and allow to thaw 20 minutes before eating. Enjoy!
