Avo-Choc. Pudding
Category: Raw Foods
Suitable for a: vegan diet
Ingredients:
------------------------------------------------------
3-4 small avocados
1 c. maple syrup
2 T. vanilla extract
1/2 tsp. salt
1/2 tsp. cinnamon
1/3 cup carob powder
Instructions:
------------------------------------------------------
Process all in food processor until smooth.

I can't really get over the idea of avocados in pudding. Does anyone have a review of this?

I'm a little nervous too. Can you taste the avocado, or is it just to make the pudding thick?

I made this and no, you can't taste the avocado!
It's so creamy...... I had it with sliced bananas.

Hi All,
When you make this, if you think you can see or taste the avo's, just add alittle more carob powder to make more choc. looking.

I've made this before, and it's lovely. you have to eat it quickly, tho, cuz the avos are better if they are really fresh. I've done it as a pudding, and in a pie crust. It's a great way to introduce people to the versatility of raw foods.

I used to make avocado puddings all the time before I was raw.
My favourite was a blend of chocolate flavoured soya milk, avocado and banana. You couldn't taste the avocado at all.
I've always wanted to make a raw version, but carob powder makes me throw up :(
I do make berry avocado puddings - my favourite is avocado, banana and strawberry, but other berries are nice too. It never ever tastes of avocado. Avocados make heavenly puddings, so creamy and delicious.

Is maple syrup considered a raw food? I wouldn't think so, given that it's made by boiling sap.

Do you have to use an entire cup of maple syrup? Not only expensive, but it must also be quite sweet. Could I cut down on the syrup and not affect the texture? I would really like to try this. Also, I'm not interested in using carob powder. Could I sub cocoa?

I made some pudding not following this recipe, but inspired by it (mine wasn't raw either). I had to use a LOT of stuff to cover the taste of avocado. It was alright, and I liked thinking it was slightly healthier than other chocolate puddings, but I don't think I'll be making it again.

I had chocolate pudding made from avocado in Hawaii on David Wolfe's raw food new years retreat. IT WAS AMAZING.
Seriously. I got seconds on it and then somebody gave me the rest of theirs cuz there was none left. I am a cacao fiend.
Ours was made without maple syrup though, and I think they used dates and agave...and raw cacao powder.

This sounds like an interesting recipe I'd love to try.
Yeah, in order for this recipe to actually be raw, you would need to substitute the maple syrup, vanilla extract, and possibly the salt with other ingredients. Maple syrup is a cooked product, and vanilla extract is probably cooked as well.

I made a carob avocado cream pie once that was to die for, and it was totally raw. Here is the recipe as it was posted to www.diseaseproof.com:
From Dr. Fuhrman’s book Disease Proof Your Child:
Carob-Avocado Cream Pie
Crust:
¼ cup unsweetened shredded coconut
½ cup crushed raw macadamia nuts
2 date-coconut rolls or 4 medjool dates
Mash coconut, macadamia, and dates together and keep kneading until well mixed. Press the mixture into a glass pie pan.
Creamy Filling:
2 tablespoons raw carob powder
12 raw cashews
1 avocado
3 medjool or 8 regular-size dates
Blend the carob, cashews, avocado, and dates together in a Vita-Mix or food processor until creamy and smooth. Spoon filling over crust and chill by freezing for one hour before serving. Serves 4.
