Vanilla Chocolate Strawberry Layered Cake

Suitable for a: vegan diet


Ingredients:

Chocolate Layer:
1 ˝ cups flour
1 cup sugar
5 TB good-quality cocoa powder
1 tsp baking soda
dash of salt
5 TB vegetable oil
1 TB applesauce
1 TB vinegar
1 tsp vanilla
1 cup cold water
Grease and flour a 9-inch round baking pan and preheat the oven to 350°F. Mix dry ingredients in a medium bowl. Add wet ingredients and mix with an electric mixer. Bake for 27-30 minutes or until a toothpick inserted in the center comes out clean. Let cool before removing from pan.
Vanilla Layer:
1 ˝ cups + 1 TB flour
2/3 cup + 1 TB sugar
2 tsp baking powder
dash of salt
2/3 cup + 1 TB vanilla soymilk
2 tsp vanilla extract
3 TB vegetable oil
1 TB applesauce
1 TB flaxseed mixed with 3 TB water (egg replacer)
Grease and flour a 9-inch round baking pan. Mix the dry ingredients in a medium bowl. Combine wet ingredients in a small bowl and add to dry ingredients and mix until smooth with an electric mixer. Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Let cool before removing from pan.
Strawberry Filling:
(Estimated)
7-9 large ripe strawberries
4-5 TB strawberry jam
˝-1 tsp maple syrup
˝-1 tsp vanilla extract
Cut 6 of the berries into rounds and place in a small, microwave-safe glass bowl. Add 2 TB of jam and mix. Microwave for about a 1 minute on high, until hot and bubbly. Add the remaining strawberries (cut into rounds), the remaining jam, the syrup and vanilla. Microwave again for 20-25 seconds. Let cool, then chill in fridge.


Instructions:

When cakes are cool, place chocolate cake on a plate and spread frosting around the edge of it. Pour the strawberry filling on top and spread it evenly over the cake. Place vanilla cake on top.

Vanilla Frosting:
(Make when the cakes are almost done cooling)
2 TB Earth Balance margarine (softened a bit)
1 cup organic powdered sugar
1-2 TB vanilla soy milk
1 tsp vanilla extract
With an electric mixer, beat together margarine and ˝ cup of the sugar until smooth. Add some soymilk and alternate adding sugar and milk. Mix until smooth and stir in vanilla.

Evenly frost the entire cake. If you have some frosting left over, you can add more to the cake or eat it with a spoon, your choice.

Chocolate Sauce:
(For drizzling on top and dipping a strawberry, make AFTER you frost the cake)
About 1 TB chocolate chips
Vanilla soymilk-add as needed to get to “drizzling” consistancy

Microwave chocolate chips and soymilk for about 25 seconds. Stir and add more soymilk if needed. Drizzle over the frosted cake in a pretty pattern or however you like. With the remaining chocolate, dip a strawberry and place on the top of the cake in the middle. Then look at how pretty your cake is and put it in the fridge to keep cool.

This cake is wonderful!!! I had the idea of a strawberry-filled cake and came up with this. It is a double-layer (one chocolate, one vanilla) cake with strawberry filling in the middle. Frosted with vanilla frosting, drizzled with chocolate sauce and topped with a chocolate-dipped strawberry. Mmmmm...
You can decorate the plate with more chocolate-dipped strawberries if you wish.
