Eat eat and eat. Eat as much as you can. You can stuff yourself at every meal and in between meals
High calories foods like avacados, nut butters, nuts, seeds, should also be eaten regularly.

weight/resistence training and high-protein and high-fat healthy foods. it's tough, but once you get into a routine it's not that hard to keep up if you're willing

Wow, veganism sounds interesting, and FUN. :)

also if you're really looking to bulk up i recommend picking up a book called Body For Life. at first glance it looks like a weightloss & fitness book but it really covers all bases and the mealplans are supposed to put you at your healthy weight, wether that be higher or lower than what you are. just replace the non-vegan items with vegan stuff and it's all good.
there's also one by... ooh.. think her name is Nancy Clarke, something Nutrition Guide. sorry that's really vague lol but it's a great book, talks a lot about endurance training, musclebuilding and even a chapter on vegetarian/vegan diet for athletes.
