Hi again y'all! I'm new to being a vegetarian, and I'm slowly trying to introduce new things into my diet. :pibo: My problem is that I'm becoming a "carb-atarian lol." I'm eating a lot of carbs, and I don't know if it's that good for me. My intake of green veggies is meduim (I'd say usually 3 servings a day), and I'm pretty low on fruit intake. I'm hard for me to keep a steady diet because I have a hard time with access to a grocery store (read: no car). :wall:

I'm starting to feel tired and starving all the time, what should I be including in my daily diet? I know I should be talking to a doctor, but y'all are here and.... :D

I don't think it's possible to eat too many carbs...after all, what did Dr Atkins die of?
You didn't mention whether you eat a lot of high-protein foods, such as beans, nuts, seeds, mock meats and so on, so my advice will be to eat lots of them.

You wont feel particularly full if all you eat is carbs. Are you lacto ovo, or vegan?

If you are lacto ovo, here are some common choices:

bfast: oatmeal made with soymilk (high in protein and complex carbs), eggs, toast, tofu scramble, bagels with cream cheese and tomato

lunch:

sandwiches: PB&J sandwich; veggie sandwich with lettuce, tomato, cheese, bean sprouts, mushrooms, cucumbers, avocado; grilled cheese and tomato soup; tempeh salad sandwich, tofu salad sandwich, egg salad sandwich

sides: fruits like apples, pears, grapes, bananas - things that are very portable; yougurts, cottage cheese, string cheese and soygurts are all high in protein and provide needed calcium; celery with peanut butter, carrots and hummus... lots of easy lunch options

dinner: you need to get some protein. You can try using "fake" meats like chik nuggets and chik patties, veggie burgers, etc. Make a baked ziti with broccoli, mushrooms and chik slices cut up in it; make mac and cheese and have it with tofu dogs; make rice and beans and serve with a hearty salad. Make bean burritos, serve with fresh salsa! The possibilities are endless - check the recipe section.

You need to make sure you are getting protein, calcium, omega 3s and vitamin B12 in your diet. This is not advice just for vegetarians... even meat eaters are lacking in calcium and omega 3s very often. Good luck!

I'm not sure what sort of veg*n you are, so I'll approach this from a "vegan" angle (and everything here can be adjusted for the type of veg you are):

Carbs aren't evil so long as they're not refined carbs (I put it in bold to give extra emphasis to it). Meaning: whole grains like brown rice and quinoa is much better bet than pasta and bread (even some "whole grain" breads I've seen are quite refined and should well be avoided or at least highly limited).

If you're finding yourself tired and hungry all the time, then try going for foods like beans or nuts. These release slowly in the body keeping you feeling fuller, longer. But don't forget those plant-based fats either because they also help to keep the fullness fires going. Avocados, nuts/seeds and olive oil are good choices here. Carbohydrates (the unrefined ones) burn best in a fuel of fat but it's gotta be the good kind (plant-based) or you're doing more harm than good, IMO. :yes:

Does your area have a metro system or public transportation of some sort? I know some areas do and some don't (especially in US) but if your area is on the "do have" list, then take advantage of it. If not, then maybe get a friend to drive you to the store when they go so you can stock up on things like dried beans, canned beans, whole grains, frozen veggies, some canned veggies, nuts/seeds, olive oils, etc (which is another reason you're feeling craptastic these days - there's hardly anything in your body to fuel you with that "unsteady diet" of yours :no: ). If you eat mock meats, stock them as well, too. The idea here is to stock up so you're not ready to chew your leg off by the 3rd day after a shop trip. :D
