I don't understand why you can't eat a lot in a day. One thing everyone who knows me tends to say is, "Wow you eat a lot." I eat meals and snacks...generally healthy...fruits, veggies, lots of beans, pastas rice, etc.
I guess you need to be specific about why you feel you can't eat.

Protein comes from more than just meat and tofu. Heck, even the cereal I eat has 9 grams of protein in 1 cup. Is there a reason you can't eat more? Maybe you're getting more than you think you are or maybe you don't need as much as you think.

I understand what you're saying. I'm not a big eater and I tend to fill up fast so I don't eat a whole lot in one day. I work with people that can eat a huge breakfast at 8:30am and then by 12:00 noon they're super hungry and they eat a huge lunch. If I eat breakfast until I'm full at around 8:00am, I'm usually good until like 2 or 3pm! Instead I tend to snack on little things throughout the day though.
To get more protein, you could eat things like soy nut butters. You could put it on snacks such as apples, pretzels, crackers, toast. Michael is right - a lot of cereals have a good amount of protein. The store brand shredded wheat cereal I eat has 6 grams per serving (which is 1-1/4 cups.) As a treat you could make a smoothie using soy nut butter, unsweetened cocoa power, a banana and soy milk. It's yummy but very filling. Beans and nuts are a great source of protein also.
I have the same problem. I have some blood sugar issues and if I don't get enough protein, I get shaky before I even feel hungry.
You might try combining proteins (whole grains with dairy -if you eat dairy- or whole grains with beans and other legumes, or having a cup of soymilk with your vegetarian meal). This isn't strictly nessasary, but I find it helps me be a lot more satisfied. Also, you can use protein sources as yummy side-dishes, like brown rice or a three-bean salad. That's how I survived my trip to Grandma's house.
