Quick Vegan Hot Chocolate
Category: Beverages/Smoothies

Suitable for a: vegan diet


Ingredients:

1 part baker's powdered cocoa
2 parts turbinado sugar or other vegan sugar
Soymilk or other plant-based milk (lacto-ovos can use cow's milk)

I came up with this on one of those cold nights when I wanted hot chocolate and I wanted it NOW, but there was no vegan mix around. It came out great and I've never used a mix since.

For one cup of hot chocolate, I typically use tablespoons of cocoa and sugar, but use whatever amount you'd like, as long as you keep the ratio the same.

In a microwave-safe container, combine the sugar and cocoa. Add just enough soymilk to cover, then stir with a wisk (the more tines the better) until mix is combined and free from lumps. If you're making a single serving, the easiest way to do this is to stick the wisk straight down into the cup, then spin it between your palms.

Add more soymilk until you've got enough to make the amount of hot chocolate you want, wisk again, then heat in the microwave. If a skin forms during heating, give it a few final wiskings. It'll be a bit foamy, but that's half the fun.

Serve and enjoy. This hot chocolate, especially when made with soymilk, is very rich and creamy. Believe me, you'll be able to sneak it past your omni friends.

This is pretty much what I do too, but to avoid a microwave I fill a mug up halfway with soy milk and fill the rest with boiling water from a kettle. Then I stir the cocoa and sugar in. I usually add a bit of cinnamon, vanilla extract, and maybe dash of allspice too. :lick:

I make a cocoa drink similar to this, except I put the cocoa powder, sugar, and soymilk (usually vanilla soymilk) in a shaker jar and then shake vigorously to get the lumps out. I've found this is easier and quicker than using a whisk or a fork to mix.

I use pretty much the exact same recipe, except I add some vanilla. It improves the taste a bit (assuming I use plain soymilk). Sometimes I add a bit of cinnamon to the mix for a 'Mexican' feel...
