Micromuffin

Suitable for a: vegan diet
Ingredients:

Instructions:

One of the following:
1/2 banana (mashed)
scoop of mashed sweet potatoes
scoop of jam (no-sugar added makes it less sweet)
apple, diced and microwaved for 2-3 minutes
applesauce (1/4-1/2 cup)
then add:
few scoops flour (I use whole-wheat)
teeny bit of baking soda
teeny bit of baking powder
either cinnamon, vanilla, cloves, etc... to cover the baking soda/powder taste
then add:
sweetener (sugar, stevia, splenda, maple syrup, etc...)
then add (optionals):
cocoa/carob powder (umm... good with all but the chopped apple)
peanut butter
raisens
flavorings (aka: cinnamon, cloves...)
oats
finally add enough liguid (tea, water, coffee, soymilk) to make a dough
micowave for 2 minutes
EAT!!!

cocoa/sweet potato spread with peanut butter
Believe it or not, I originally got the idea from this recipe from a LOW CARB website. Weird, huh???
