View Full Version : Vegan Peanut Butter Cookies

Suitable for a: vegan diet


Ingredients:

1/2 cup of Earth Balance
3/4 cup of peanut butter
1/2 cup of organic sugar
1/2 cup of organic brown sugar
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
1/4 teaspoon of energy or egg replacer, equal to one egg
1 teaspoon of vanilla
1 1/4 cup of flour

Mix margarine with peanut butter, sugar, brown sugar, baking soda and baking powder, then set aside.
Mix egg replacer with a few drops of water,vanilla and adding flour. Slowing adding mixture set aside. If dough gets dry add water or oil.
Pre-heat oven 375. Bake for 7-9 minutes. Makes about 36 cookies.

I made these for the holidays. I did a taste taste with my ominmore boyfriend and friends. These where compared to cookies containing real eggs and butter. And the vegan version won, so I am very proud.These are very sweet cookies and would never know that they are vegan, I also toke these to work and they were a hit. I just made these and they were very, very good. I made half of the cookies just peanut butter and the other batch was peanut butter choc chip. Thanks for the recipe, 'm adding this one to make recipe book. I definately reccomend them :)

Ohh these sound yummy. I'm going to try to make these cookies this weekend.
