Hey,

a couple of years ago I went on a 3 month road trip around the US as a vegan. it was awesome. We mostly bought food at grocery stores. Nuts, fruit, bread, and lots of other stuff will stay at room temperature for a good while. Bagels and rolls can be bought individually if loaves of bread are too big. We carried a really little cooler, like a foot square, for perishable stuff like hummus, cheese (my friends were not veg), etc. We'd carry a little campstove and often make lunch at roadside stops. This doesn't necessarily work in the dead of winter, though.

For cheap restaurant eating, the BK veggie and Taco Bell's 5-layer burrito were my standbys. (5 layer burrito being the 7-layer without cheese or sour cream. mmm, guacamole.) The 3 of us developed a real addiction to Waffle House homefries. I used to get them and bring in my own peanut butter to go on the raisin toast, to round out breakfast.

I think I ate healthier and felt better on the trip than if I hadn't been vegan. So be creative and go to grocery stores are my biggest tips. And don't be afraid to ask the waitress to make some changes to stuff on the menu. When I ate cheese I used to get mushroom/mozza burgers without the burger part as a regular truck stop meal.
