Well, I think this side of the Forum is dead, so we have to bring it back lol..all you people are amazing and have great information..do you have any good recipes we should try? I'd love to try something new, my same ol Salad everyday is getting old..

One of my favorites and it's quick and easy too.
Look at the ingredients on your BBQ sauce - some are low fat, some aren't.
Quick Barbeque Sandwiches
1 cup TVP
1/2 cup water 1/2 cup BBQ sauce - heated to high on stove or in microwave
1 medium onion, chopped fine
1 or 2 cloves garlic, minced
water or other liquid for sauteing
your favorite barbeque sauce
Mix the TVP with the hot water/BBQ sauce mixture and set aside for 5 minutes.
Saute onion in about 1 Tbs. liquid until almost clear. Then add garlic and
cook for another minute. Add the reconstituted TVP. Add the barbeque sauce until the mixture is the right consistency for sandwiches. Heat thoroughly and serve.

Leftover Bake
600g mashed pumpkin
200g mashed vegetables (peas, corn, carrot etc)
1 egg (or egg replacer)
1 cup skim milk (or skim soy)
1 cup cooked rice
50g low fat grated cheese (or soy cheese)
1 clove garlic, crushed
30g low fat grated cheese, extra
Mix all together except extra cheese. Place in non-stick casserole dish. Top with extra cheese.
Bake at 180C for 30 minutes.
Variations: Top with breadcrumbs (this is how I did mine, and it turned out great :lick: ). Add beans or tvp. Swap rice for pasta. Add your favourite herbs and spices.
I served mine with capsicum spread, sweet chilli sauce and low fat sour cream.

Sometimes I will make a veggie stir-fry, using water instead of oil to sautee the vegetables. The water evaporates quickly - just add more. Served over brown rice, it is pretty low fat.

I make a lot of vegan Indian food. The only fat added is from about 2 tbsp olive oil which when a recipe serves 10, really isnt much at all. With all the flavors from curry and garam masala, you arent missing it at all. In fact, I think most dishes taste rich.

This recipe is made with no added fat and the ingredients all have a negligible amount of fat if any!
* 2 Cups dried Lentils
* 1 Cup finely chopped onion
* 1 1/2 t garlic powder or 1t granulated garlic (there is a difference)
* 1/4 t ground black pepper
* 1T Ground Cumin
* 1/2 Cup diced Celery
* 1 Cup diced Carrot
Dump all of the ingredients in a stock pot with 8 cups of water bring mixture to a rolling boil and lower heat to a light boil.
let cook until lentils are tender, and mixture thickens a little;
approximately 40-45 minutes.
Salt to taste.
I like this one because it's an easy one to prepare and it cooks on the burner while you are doing other things, making it a real time saver too!

Almost all my recipes are low-fat! If you base your meals around beans, vegetables, fruits, and whole grains, and don't go too crazy on the oils, your meals will be low-fat naturally.
The yam-peanut soup I made last night, however, was NOT low-fat. :hungry:
