View Full Version : Weaning Off Eggs... the SUPPORT thread!
My thanks to AccidentalVeg for starting the weaning-off-dairy thread, and providing the inspiration.
I've found that eggs don't turn up as much in main courses as often as dairy does- but they are common as ingredients in baked goods. That's the main source of eggs in my diet at the moment.

I haven't consumed eggs in the form of eggs for nearly 10 years.
But I only stopped consuming eggs in baked goods about a year and a bit ago. I have found though, that having the egg "out" to decline baked goods prevents me from snacking on things that aren't really healthy for me, or are largely an empty calorie source. It is second nature now to decline.
There are so many amazing recipes out there that don't include eggs!
I stopped buying and eating eggs months ago and don't miss them a bit. I don't bake, but if I decided to do some baking, that's no problem, I'll just get some Ener-G-egg replacer.
Now eggs as trace ingredients is a whole different story... :stinkeye:
Actually, I seem to be doing pretty well with that. As long as the Snickers bars with almonds don't call to me, I'm okay. :D

The best and cheapest egg replacer is flax meal. It is an awesome binder. And it's really healthy.

I "officially" becaem vegetarian in mid September of this year, and for the rest of the year prior to that, I rarely had eggs alone...maybe a couple servings a month. Actually, the main reason was for the cholesterol aspect.
As for eggs at all, I had them a little bit for my first week or two at college, but since then, I've cut them out entirely. When it comes to snacks with egg ingredients, I don't consume a lot, but I am not 100% egg free when it comes to that.
Having recently become vegetarian, not only am I happy that I was able to find this board, but can have similar opinions to others and it's great to be able to communicate like this. I've been using homemade egg-substitutes while making pancakes for about the last 12 months as well.

I stopped buying eggs and cowmilk the same day I stopped buying meat, but you're right, avoiding them in all the various forms in which they assault is us a whole different story. I bought some NRG egg replacer, but I've had mixed results with it. I don't bake much anyway, so baking replacement isn't a huge issue, but I am wondering about an egg-free, dairy-free pumpkin pie for Thanksgiving.

Yeah, ener-g absolutely has NOT worked in any brownies, be they boxed or from scratch. Fortunately nature's path makes a nice boxed brownie that is vegan. :)

Do you mean a brownie mix or a pre-made brownie that you just unwrap and eat?

Eggs used to be my favourite food! Think they might still be, but i don't eat them much now. I feel a bit weird now thinking of where they came from. Whenever i get really hungry though i always think of eggs for some reason. On occasions, when i've been drunk, i've made egg sandwiches, and a couple of weeks ago, i was starving, and bought an egg sandwich. I'm gona have to stop talking about them, i'm starting to get a craving!

If you miss egg salad sandwiches, just use tofu in place of the egg, then be sure to add some black salt. When I feed this to omnis, or former omnis, they always say, "wow that tastes exactly like egg"

Call me crazy but HOW do you make an 'egg' salad. I'm very curious because i've never had it before! I've also never had potato salad or back in my omni days chicken salad
Egg salad is usually hard boiled egg, mashed up and mixed with mayonnaise and possibly other things like finely-chopped celery. I suppose there are other ways to make it, but that's how it was made in my family.
Edited to add: potato salad in my area is made with boiled potatoes (cooled) cut into fairly large chunks, with various dressings, and sometimes bacon.
But Anna Thomas, in one of her "Vegetarian Epicure" books, gives a recipe for vegan potato salad that tops them all- "Potato Salad Tzapanos", named for a Greek restaurant where she first had it. It's simple: boiled cooled potatoes and carrots, cut into large chunks, with a simple dressing of olive oil and lemon juice (or was it vinegar?... I usually prefer lemon or lime juice), seasoned with garlic and dill.
It's been so long since I had chicken or tuna salad, I probably couldn't tell you what was in those.

eggs, were hard for me to cut out as well... what really got me to stop eating them however was in my BIO class we were learning about comparative anatomy between animals and humans, then we got on the subject of comparative embryology.... do you know we all look exactly the same... when we first start to develop, and I mean like fish and humans and birds and snakes... after that.. everytime I tried to eat an egg... I started feeling sick to my tummy. Still trying to cut it out of baked goods though. Thats the hardest part.

You can also use half a banana as an egg substitute. That's what I use for the boxed brownies I make, and they turn out really well (if you don't mind a faint banana-y flavour).

Yup! I use 1/4 cup unsweetened applesauce to replace an egg in cookies, banana bread, etc
I was never big on eating eggs, and I would buy a dozen just to use in baking.. and usually throw most of them out. So the eggless part of being vegan is easy for me :p

I made an excellent vegan pumpkin pie a few weeks ago. It used tofu in the recipe, so the eggs were completely unnecessary. I must say, the pie was FANTASTIC!

I cooked with eggs all the time working in an omni camp kitchen. The most we did at once was 90 scrambled eggs for breakfast per morning. I was surprised that even after making cheesey eggs one morning, I still didn't want them. That was an amazing thing to notice!
I'm very thankful for e-nergy egg replacer, and all of the locals who bake vegan treats. without them, I would still be using the not-so-great egg replacers that I use to (of cource, no offence, I din't try many substitutes before falling in love with e-nergy or whatever they are called).
The only thing I miss about eggs (currintly) is how cheap of a meal the make. Otherwise, they smell bad, arn't healthy, and don't taste all that great.
Has anyone heard about those new vegan scrambled "eggs" that came out a few months back? According to what I heard, they havn't hit the US yet, but it'll be great when/if they do!

I can do without eating eggs for breakfast, but I find it difficult to find products (cookies etc) that do not have eggs in them. I know I could make my own using ENerG egg replacer but I haven't been able to find that so far.
I was reading Veg News the other day and saw that they have actually invented some type of vegan product that actually looks like an egg with a yolk. Thought that was interesting.
I don't like the taste of eggs, but I buy my own organic eggs for my own money ( i live at home) and nobody else in the family gets to eat unless they promise to help me pay for the next lot =) Also the only dairy I eat Is ice cream and yoghurt, I'm not sure if I want to be vegan though. Its gradual.

My attempt to make tofu egg salad didn't turn out well AT ALL. I had to throw it out it was so yucky. I used to make a deviled egg salad that was really good, so I thought if I just took all the normal ingredients and subbed tofu for the egg, it would be fine, but it was NASTY. :( What did I do wrong? Luckily, there is a commercial tofu "egg" salad I get at Whole Foods that I like pretty well, and I just kick it up with a bit of my deviled egg ingredients, but it's pretty expensive. I also found out the hard way that it can go bad quite quickly.
I used to like eggs, and every so often I miss just eating a hard boiled egg or a poached egg on buttered toast, but those haven't been a big problem. I simply cut them out of my home life. Every so often when we're out for breakfast, I have scrambled eggs or a kolache with egg in it, but that's getting more and more rare.
I do still harbor a deep fear of cooking with egg substitutes, though. I have several recipes that I like to make that call for egg, and I'm just not confident about trying them with egg subs.
