Sorry, don't have a photo of this one.

For my housewarming I threw this together (all organic) and it was well-received.


Toss a bunch of raw cashews in a food processor and grind into submission.
Add some frozen kiwi and strawberry slices and process until tolerably smooth.
Dump into a serving dish and make a hollow in the middle.
Make another batch with cashews, kiwi, and blueberries. Plop that into the hollow in the middle.

Serve with slices of apples, pears, or any other fruit strong enough to dip.

Oh, wow.. I really want to make this. Do the fruits have to be frozen?

I don't know if they have to be frozen -- probably not, though. That's what I happened to have when I threw it together :) I bought large numbers of organic strawberries when they were in season, and I just bought 40 kiwi for 20 cents each on closeout. Anyone want to help me peel and freeze them? ;)

I did keep an eye on it and it didn't seem to go watery or anything after being out, so most likely unfrozen would be just smurfy.

I was really pleased at how well it turned out. Even the omnivores raved about it, so I thought I'd shared the idea, especially since it's fast and simple.
