My mom had me and the BF over to dinner tonight. I was already pretty confident that she wouldn't have me over without making something I could eat, but get this... She went out and bought a vegan cookbook, bought tofu and soy cheese, and made a vegan vegetable lasagna with whole wheat noodles! Plus salad, bread and peach pie for dessert. I almost cried. When I thanked her for being so supportive and altering her cooking to suit me, she just shrugged and said, "Why wouldn't I? If I don't cook something you can eat, you won't have any reason to come see me." Well, that's not true of course, but still. I love her so much! :sunny: :love:
How I wish we could all have parents this supportive and understanding. It doesn't hurt that my mom likes to cook and try new things, so cooking for me is like a whole new adventure for her. :chef:
