Ok I notice that alot of things use enyzmes as an ingredient. What exactly are these? I still use dairy and I notice it on sour cream.
Also things that use cheese's.
I was reading where they use to use rennet (sp) or something like that and it was animal based, but now they dont use it anymore.
Can anyone help me out with this

Enzymes are proteins that are used in living organisms to make certain chemical processes in the body happen. For example, one set of enzymes are used to break up starch into simple sugars. Another set of enzymes break up proteins.
Usually in cheese-making the enzymes than are used chop up casein and other proteins. This makes them less soluable in water, so they fall out as curds. Rennet was traditionally used for cheese making but a lot of modern production methods use microbial enzymes for quality control reasons.

You do have to check the ingredient list b/c some cheese still does have rennet and some doesn't.
If it's not listed I always assume it does have rennet in it but I couldn't tell you the % of cheese with rennet and % without.
