Chilli con veggie chocolate wine divine

This recipe is suitable for a: vegetarian/vegan diet.

Category: Main Dishes - Other




Ingredients:
-----------------------------------------------------

TVP or nutmeat
Extra virgin olive oil
Red kidney beans
Fresh chopped chillies - small hot red ones or as you like it
1 or 2 Onions
3 or 4 cloves Garlic
1 capsicum (red green yellow - its up to you)
1 big can of tomatoes (chopped)
1 - 2 teaspoons hot paprika powder
1 - 2 teaspoons hot chilli powder
1 - 2 teaspoons cummin powder
tablespoon of good cocoa powder (DONT USE DRINKING CHOCOLATE!!!)
glass of red wine
fresh corriander to garnish

All measurements are really rough - feel free to use as much or as little of the ingredients & spices according to your taste...




Instructions:

Method;

Open wine & pour yourself a big glass...
Soak TVP as per instructs on packet or open can of nutmeat...
Chop onions & garlic & fry in extra virg olive oil
When onions are translucent, add TVP or nutmeat to brown
Then add can of tomatoes, chopped capsicums, kidney beans, chillies, paprika, hot chilli powder (to taste), cocoa powder & wine
Simmer for about 15 - 20 mins & enjoy on a bed of brown rice or with good bread with fresh coriander to garnish. Mmmmmm yummmmy

Tastes even better the next day!

Chocolate & chilli? Try it, they go wonderfully together...

leave the wine out if you like.

Can fool even the biggest meat eater if you don't tell them it's veggie!

Bit of a bump for an old recipe but I tried this one out today and it was pretty damned good. I used shaved couverture rather than cocoa powder (because that is what I had) and it was very, very, good. Two thumbs up!
