Tofu and Salsa Taco Salads
This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

1 pound firm Tofu
1 cup your favorite salsa
1 Tbsp. Olive Oil
2 Tbsp. fresh cilantro, chopped
1 Tbsp. green onion, chopped
2 Tbsp. celery, diced
1 clove garlic, pressed thru garlic press
or
1 tsp. granulated garlic
1/2 tsp. ground cumin
1/4 tsp. cayenne
2 TB. fresh lime juice
1/2 cup fresh tomatoes, diced or cherry tomatoes
salt and cayenne pepper to taste
Lettuce of your choice
Taco Salad Bowls
Additional accompniments, as you like:
black beans
sliced olives
cubed avacado
chopped parsley or cilantro
green onions
Instructions:

Cube tofu into very small cubes and place in a large mixing bowl.
Add salsa, olive oil, cilantro, green onion, celery, garlic, cumin, cayenne and lime juice. Mix well and let sit at least 15 minutes - I let it marinate over night.
Stir in fresh tomatoes. Taste and season with salt and cayenne as desired.
Put desired amount of lettuce in a taco Salad Shell/Bowl.
Top with several heaping serving spoonfulls of the Tofu-Salsa mixture, as much as you like.
Garnish with accompaniments: black beans, cubed avacado, sliced olives, chopped parsley or cilantro, green onions, shredded carrots, etc. Use your imagination...

We make this often throughout the summer when we have a variety of "Taco Salad" ingredients around, but I don't feel like heating up the kitchen cooking a pot of beans.
For those who eat canned beans, this is easy to add some beans without having to cook them....
