Spicy Blackeyed peas and greens

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

Olive oil to saute
1/2 c finely chopped onion (I prefer red)
1 large clove garlic, minced
1 teaspoon cumin
1 teaspoon dry mustard
1-3 teaspoons chilli powder
1 tomato, peeled,seeded, diced
1 green pepper, seeded, chopped (optional)
16 oz blackeyed peas, drained
4 to 6 oz clear vegetable broth
Tabasco to taste (a few drops, depending on the pepper)
1 teaspoon white vinegar
salt
pepper




Instructions:

Saute onions, garlic, pepper and spices until soft. Add the peas, broth and tomatoes. (broth will evaporate some)simmer for about 20 minutes, add vinegar, salt, pepper, and Tabasco to taste.

Serve with a generous amount of well cooked collard greens (what else?) and a big slice of warm hearty bread and Earth Balance.




Additional Comments:

you can use a green bell pepper if you like things mild, or a Jalapeno, or none at all. give it a taste before adding the Tabasco, especially if using a spicy pepper.
you really can't go wrong here. i have roasted a habanero for a smoky flavor and omitted the Tabasco.

This is a spicy recipe, great for winter.
