Bok Choy and Buckwheat Noodles in Garlic Ginger Broth

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

8-ounce package soba noodles
2 teaspoons toasted sesame oil
1 onion, cut in thin half moons
2-3 cloves garlic, minced
1 carrot, cut into matchsticks
5 shiitake mushrooms, cut into bite-size pieces
2 cups chopped bok choy, leaves and stems
4 cups water
1/3 cup tamari or shoyu
1/2 pound firm tofu, cut into 1/2-inch cubes
1 Tablespoon freshly grated gingerroot
2 scallions, cut into thin slices




Instructions:

Prepare soba noodles according to package directions. Drain and set aside. Heat oil in a 4-quart soup pot. Add onion and garlic; sauté over medium heat until onion begins to soften. Add carrot and mushroom pieces; sauté a few minutes more. Add bok choy, water, tamari, tofu, and gingerroot. Bring heat up until mixture begins to simmer. Cover and simmer for 10 minutes. Serve this dish by placing a handful of noodles in each serving dish. Ladle broth and vegetables over the noodles. Garnish with scallions.

I have a horrific cold. I am irritated because I NEVER EVER get sick, so I don't quite know what to do with myself...

I haven't eaten all day, but I just made this (because I had all the ingredients, not because it sounded good - nothing sounds good)...

Well, Ok, so I had to write a short "review' because it was very good! And wonderfully yummy and warm and very comforting... YAY! Just what I needed.

Could you make this without the Tofu? I'm not a big fan of Tofu but this sounds awesome.

Why couldn't you make it without the tofu? I think it should be just fine... you could even sub. some other protein source if you wanted/felt the need... seitan strips, tempeh, some faux meat product?

made this as a soup earlier this week. i doubled the broth, mushrooms and carrots, used the whole head of bok choy, and the whole bock of tofu. i also added a head of nappa cabbage and two broccoli crowns. it was great!
