Spicy Sweet-Potato Oven Fries

This recipe is suitable for a: vegetarian/vegan diet.

Category: Side Dishes




Ingredients:
-----------------------------------------------------

2 large unpeeled sweet potatoes (about 2 pounds)
1 T olive oil
1 t ground cumin
1 tsp onion powder
pinch of cayenne
OR 2 tsp chili powder or any "cajun spice blend" - whatever you prefer
1/4 t black pepper
Vegetable cooking spray




Instructions:

Clean potatoes, cut into french fry strips (1/4-inch by 1/4 inch).

Combine oil, cumin, cayenne and pepper (or whatever spices) in a large mixing bowl.
Add potatoes and toss well to coat.
Arrange on a single layer on a baking sheet coated with vegetable cooking spray. (I like the "Olive Oil Pam").

Bake at 425 degrees for about 15 minutes.

Flip potatoes over, and bake for another 10-15 minutes until browned.




Additional Comments:

Notes:
- Flavor is best if potatoes are well coated when tossing with oil and spices.
- When spreading the potatoes on the baking sheet their sides can touch, but its best if they don't overlap.

Oh - and yes, someone just PM'd and asked if yams would work too - they work basically the same - equally yummy...
