oatmeal apple cranberry walnut cookies
This recipe is suitable for a: vegetarian or vegan diet

Ingredients:

1 c vegan margarine
1 c firmly packed brown sugar
0.5 c granulated sugar
0.5 c applesauce
1 tsp vanilla
1.5 c all purpose flour
1 tsp baking soda
1 tsp cinnamon
0.5 tsp salt (optional)
3 c oats (quick or old fashioned, uncooked)
1 c dried cranberries
1 c walnut halves
Instructions:

Heat oven to 350F. Beat together margarine and sugars until creamy. Add applesauce and vanilla; beat well. Add flour, baking soda, cinnamon and salt; mix well. Stir in oats, cranberries and walnuts; mix well by hand. Drop by rounded tablespoonfulls onto a greased cookie sheet. Bake for about 12 minutes. Let cool on cookie sheet about 15 minutes, then remove to wire rack or plate. Makes about 4 dozen.

This is my vegan version of Quaker Oats' "vanishing oatmeal cookies", so watch out- they really do disappear! I use walnut halves, but you can use walnut pieces if you'd like. Also i get my dried cranberries from the bulk bins at my local supermarket- 1 cup costs about a buck. Enjoy!
