Black Bean Soup

This recipe is suitable for a: vegetarian or vegan diet

Category: Soups




Ingredients:

1 t. olive oil
3/4 c. chopped onion
1 Anaheim pepper, seeded and chopped
2 garlic cloves, minced
2 c. vegetable broth
1 can (15 oz.) black beans, rinsed and drained
1 T. lime juice
1 t. ground cumin
1/2 t. ground coriander




Instructions:

In a saucepan, saute the onion in oil until translucent. Add pepper and garlic; saute for 2 minutes. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.
Cool slightly. Puree half of the soup in a blender; return to the pan. Bring to a boil. Reduce heat; simmer for 5 minutes.

This makes 2 or 3 servings, depending on how hungry you are! I like it because, unlike most soup recipes, I don't end up eating the leftovers for an entire week.
