Whole Wheat Carrot-Pineapple Cake
This recipe is suitable for a: vegetarian or vegan diet

Ingredients:

1 1/2 c. whole wheat flour
3/4 c. sugar
1 t. baking powder
1 t. baking soda
1 t. cinnamon
1/2 t. salt
2/3 c. applesauce
egg substitute equal to 2 eggs
1 c. finely shredded carrot
1/2 c. canned pineapple (with juice)
1 t. vanilla
Instructions:

In a large mixing bowl, combine the dry ingredients. Make a well in the center and add in remaining ingredients. Mix well. Bake in a greased 8 or 9 inch square pan at 350F for 30-35 minutes or until done.
