Hi! My girlfriend loves cheese but has recently decided to give up dairy. Does anyone have a favorite non-dairy cheese they can reccomend? Is cheese chees if there's no dairy product in it?
Thanks.

Vegan Gourmet is pretty popular. I recently tried it again after a long break and have found I like it better now that I am farther removed from dairy cheese.
You can see it at www.imearthkind.com
Sometimes people call "cheese" that is not animal based "Uncheese." There's a whole cookbook dedicated to the concept. Maybe that'd be a nice gift for your girlfriend. ;) Here it is: http://www.amazon.com/exec/obidos/tg/detail/-/1570671516/qid=1126828657/sr=8-1/ref=pd_bbs_1/103-7541761-1412653?v=glance&s=books&n=507846
There are other kinds too, but I'm in Canada and can't them so I don't remember their names.

Hello.
Tell your girlfriend to watch out for "casein" in some soy cheese. casein wouldn't be considered vegan since it is derived from milk.
I was a cheese addict before giving it up a few months ago. I now love Vegan Gourmet. The mozzarella melts very well, although for some reason I've found the cheddar doesn't melt as well. So for nachos I just add mexican spices to the mozzarella and it works fine.
I can't find monterey jack or nacho in my area, so I haven't tried those flavors.

VeganRella is pretty good too, it does "melt" like Vegan Gourmet does too.
I do like the taste of Vegan Gourmet better, but alot of places seem to only stock Vegan Rella, atleast around my area.
Is it hard to get non-animal stuff in Canada? Seems like Canada has a reputation for lots of hunting and fishing and animal eating. Is it hard to be a vegan up their?
No. It's easy. If you live in a big city you have lots of options and if you live in a small city you don't. Probably like the States.
I get this awesome vegan cheese but I can't remember what it's called. It's a mozzarella type cheese. I tried this other one a couple years ago and it was sooo nasty. :sealed:

Vegan Rella Mozzarella is the best vegan cheese. I also like Toffuti cheese slices for sandwiches.

i like tofutti cheese slices, teh "vegan" cheese if i want something that tastes like paste (that's how i remember cheese tasting: like paste) and is stretchy, i like the vegan supreme stuff BEST. OMG it's heaven.
but i was never a cheese person so i very rarely go hunting for cheese. watch out for casein, it makes it stretchy, and whey.. both of which are derived from milk

I have only tried Vegan Gourmet cheese. It melts but when you bake it, it becomes crispy.
I read about Rella Cheese, but they're not vegan.. never knew they had Vegan one??? From the sources I have read, they're not vegan.

I made vegan tacos last night and had my omni boyfriend over. We had Vegan Gourmet Nacho for the cheese. My boyfriend hated it (but liked the fake beef, it just wasn't greasy enough for him) but I liked it. It's very over powering so a little goes a long way. It melted nicely.
Ok, I bought some of my favouite vegan cheese. It's made by Earth Island and they are in California but I am in Canada and I can get it here. It's 100% vegan and the one I get is called Vegan Gourmet and the flavour is Soya Mozzarella .

I recently developed a love of the Soy Moon gouda "cheese". It freaked me out a bit on the first bite because the texture is a bit different that real cheese, but once I got used to it...
It took us less than a week to finish off, which is a first for non-dairy cheese.

Yeah - and how disappointing is that?!? I recently discovered that my "veggie slices" had milk products in them, and I had to pitch them into the trash. Yuk. Definitely read the packages!!!

Trythe Uncheese Cookbook (I think Amazon.com has it). The recipes can be time consuming - and who has time to grind cashews and strain tofu and whip soymilk all for a simple cheese sauce... BUT... BUT.. It really is worth it, if you can manage to make the time to try some of them - definitely helped my cheese cravings....
(Though if someone would "invent" a vegan Blue Cheese I would be indebted to them for LIFE!! )
I haven't had much luck myself with non-dairy cheese, grr I can never get it to melt on my baked potato. So thank you, starter of this thread.

I was wondering what happened to my pizza... :surprised
It was still very good though... I just looked at it and was like, "I thought everybody says this stuff melts....":p

I melted mine in a saucepan first and then put it on the pizza. That worked well.
TNS, what recipes do you like in the Uncheese Cookbook? I haven't really like most of the recipes I've tried.

I just have to say, reading all this stuff is making me so happy!
I've been addicted to cheese my whole life. I'd cut off several huge chunks of cheddar at a time WHILE I was making a thick cheese sandwhich slathered in mayo. I'd usually make either 1 1/2 sandwhiches or 2 a time! I'd also stuff myself on HUGE bowls of mac & cheese, using almost half a block of cheddar in one sitting. It was pretty bad.... I had an "eating problem" you could say, lol!
Anyway, the few times I've been vegan have been the best, physically speaking. I felt SO much healthier and cleaner!
I'm easing back into veganism again now and I haven't had cheese in...maybe a week and a half, maybe more. And I just get so super excited reading all this stuff knocking cheese and dairy! It makes me all warm and gooey...or maybe I'm just weird, lol. Anyhow, you guys rock! (And I never use words like "rock" so that means something!)
