Toasted Nut and Parsley Pesto

This recipe is suitable for a: vegetarian or vegan diet

Category: Main Dishes - Pasta




Ingredients:

3 cloves garlic, unpeeled
1 c. pinenuts, walnuts, almonds, pecans, or any combination thereof
1/2 c. fresh parsley leaves
7 T. olive oil
1/2 c. Parmesan cheese or soy Parmesan
salt and black pepper
Pasta, cooked




Instructions:

Toast the garlic in a small, dry skillet over medium heat, shaking the pan occasionally, until softened and spotty brown, about 8 minutes. When cool, remove and discard the skins. Toast the nuts in the same skillet over medium heat, stirring frequently, until golden and fragrant, 4 to 5 minutes. Cool.
In a food processor, process the garlic, nuts, parsley, oil, and cheese until smooth, stopping as necessary to scrape down the sides of the bowl. Season to taste with salt and pepper.
Serve over pasta.

That's 1/2 c. packed parsley. Shove as much parsley as you can into that measuring cup. lol Forgot to add that!

I made some of this tonight and tossed it with pasta, roasted veggies (zucchini, squash, broccoli and onion) and tomato. :drool: It was so good!

Oh and I also added a bit of water this time as it wasn't coming together very well. Worked great last time, but it wasn't coming together so well this time, for some reason. Anyways, adding the water helped and it still tastes awesome!

Everybody should try this!
