Mustard Pickles
This recipe is suitable for a: vegetarian or vegan diet

Ingredients:

7 large cucumbers
7 large onions
1 red pepper
2 1/4 cups white vinegar
1/2 cup water
1/2 cup flour
3 cups white sugar (or raw vegan sugar)
3 tbsp dry mustard
3/4 tsp turmeric
1 tbsp ground ginger
Instructions:

Peel cucumbers, take the seeds out and then cut into 1/2 inch cubes. Peel and slice the onions. Put in a pot, cover with 1/3 cup of salt and leave overnight. Drain in the morning.
Combine flour, sugar, dry mustard, turmeric, ground ginger, vinegar and water to make sauce. Stir sauce constantly until thick. Chop peppers and add them and the onions and cucumbers to the sauce.
Return to boil, boil for 10 minutes.
