Toated Nut and Parsley Pesto

This recipe is suitable for a: vegetarian or vegan diet

Ingredients:

3 cloves garlic, unpeeled
1 c. pine nuts, walnuts, almonds, pecans, cashews, or any combination thereof
1/2 c. fresh parlsey leaves
7 T. olive oil
1/2 c. Parmesan cheese, or Soy Parmesan




Instructions:

Toast the garlic in a small, dry skillet over medium heat, shaking the pan occasionally, until softened and spotty brown, about 8 minutes. When cool, remove and discard the skins. Toast the nuts in the same skillet over medium heat, stirring frequently, until golden and fragrant, 4 to 5 minutes. Cool the nuts.
In a food processor, blend the garlic, nuts, parsley, and oil until smooth. Stop as necessary to scrap down the sides of the bowl. Transfer the mixture to a small bowl and stir in the cheese.
