Peanut Butter Bars

This recipe is suitable for a: vegetarian or vegan diet

Category: Snacks




Ingredients:

2 tbsp margarine/butter (I used dairy free marg)
3/4 cup brown sugar
1/2 cup milk/soy (I used skim dairy milk)
1/2 cup creamy peanut butter
1 egg/replacer
1 tsp vanilla
1 cup plain flour
1 cup quick oats, raw
1/2 tsp bicarbonate soda
1/4 tsp salt




Instructions:

Beat margarine and brown sugar until well combined. Stir in milk, peanut butter, egg and vanilla until blended. Gradually mix in combined flour, oats, bicarbonate soda and salt until blended.
Spread mixture evenly in well-sprayed 13 x 9-inch baking pan. Bake in preheated 175°C oven for 20-25 minutes. Cool completely in pan on wire rack. Cut into squares, store in airtight container at room temperature.

Also great with choc chips - 3/4 cup dark chocolate chips, stirred in after flour, oats, salt and bi-carb.

I just made these! Well, I more or less followed the recipie, annyway. I used soya milk & sunflower spread. I couldn't find egg replacer so I put in a banana & doubled up the amount of peanut butter. So really I made Peanut Butter and Banana bars. They taste good. :D

Thanks :) How was the texture with yours? Mine I found are best straight out of the oven, or lightly toasted so the top is slightly crunchy and the middle is warm and fudgy.

They crumbled quite easily, but less so after they'd cooled.
