Easy Basic Simple Vegan Pancakes
This recipe is suitable for a: vegetarian or vegan diet
Category: Breakfast
Ingredients:

Dry Ingredients
1 cup whole wheat pastry flour
1 tablespoon baking powder (aluminum-free recommended)
1/2 teaspoon salt
Liquids
3/4 cup rice milk (soy milk should work just fine -- almond milk works well)
1/4 cup applesauce
Instructions:

Combine dry ingredients well in a bowl. In another container, combine the applesauce and ricemilk. Pour the liquids into the dry ingredients and combine till all the flour is very moist but still a little lumpy.
Heat up a pan -- I recommend an iron skillet with some spray oil on it -- and get it good and hot. Have a plate ready to catch completed pancakes. Take a 1/4 cup measure (like the one you used for the applesauce) and scoop up some batter and pour into the pan. You should hear it sizzle. (Don't pour any more in!) Wait until the pancake becomes bubbly and the bubbles look like they might want to stay, then turn the pancake over. Cook the other side for 30-45 seconds. Put the completed pancake onto the plate and repeat the great batter pouring process until you run out of batter.

You can use maple syrup on these pancakes of course... but I recommend making a raspberry, blueberry, blackberry, apple, or other fruit of your choice topping to go on the pancakes. :)
A variation that I tried is carrot juice for the rice milk. Don't do this variation as your first try. The batter comes out really whippy and airy. The pancakes come out orange, yet surprisingly savory. All in all, I would say it turned out good. :)

I bet a sprinkle of cinnamon in the pancake batter'd be nice too.
...I'm actually quite tempted to try the carrot one first though:D

I often do add cinnamon to this mixture. If you want to try the carrot juice thing first, go for it. :) They're actually quite nice and not as "unusual" as you might expect.

I was merely the cook, my kids did the taste-testing.
This is the MOST EASY recipe for pancakes ever... (BTW, it's sometimes fun to throw a few vegan chocolate chips in...).
Definitely go with the fruit topping... raspberries happen to be MY personal favorite :smitten:

(psssst... Coralfang.... if you don't have applesauce... smoothly blended silken tofu works... or mashed bananas... results won't be QUITE the same, but still good...)
...or if you need to get applesauce and don't want to open a whole jar, buy those little "lunch cups" of applesauce. One of them is about enough for a double recipe - which is what I make for me and my kids...
Of course, my 5-year-old's favorite way to eat these pancakes is with peanutbutter and cinnamon applesauce - so a whole jar always gets used up around here...

My sister just asked me for a vegan pancake recipe to make for my kids.(I'm staying with her over the Holiday weekend)
She made these and said "Those are really good but I'm not going to sign up as a member just to post a review, so will you post one for me?"
So - the official review from my little (well, OK, 32 isn't "little" sheesh) sister is:
"Hey! These made really great pancakes. I was suprised, but in a good way.
I think I'll make my pancakes like this all the time. It's easier than cracking those messy eggs and whatever else I do for pancakes.
I give them 5 stars. ....No. ...Wait. That sounds like Thai Food.
I give them Two Thumbs Up. .....No. ...Wait. Now it sounds like a movie review.
OK, I give them my official Auntie seal of approval.
Good job to whoever came up with these, they're excellent. What else do you know how to make and can you come to my house and cook it?"

mmm i just made a batch of these right now for err...breakfast/lunch
i ran out to the store to get some apple edit:sauce not juice lol. i used soy milk because i had it handy. i'm not sure exactly what ww pastry flour is, but i decided to just use my ww flour but was a little nervous about how it would turn out. turned out perfect anyway.
they were MAJORLY yummy. i split them with my sister and we were both starved and probably ate them all in under 3 minutes lol.

Pastry flour is just a bit "lighter" and makes the pancakes slightly less "heavy".

Okay, I'll admit it, I can't make pancakes or French toast. They just don't turn out right for me. They come out raw on the inside and burned on the outside. Please tell me what I'm doing wrong. I used canola oil for the first two pancakes and spray for the second two. Same result. I make a great cake in the oven, but making a pancake baffles me.
Other than that, the little bit that turned out alright was very yummy. I would really like at least a whole pancake to be yummy. :no:

ahh sometimes my pancakes turn out raw on the inside if i try to watch tv while making them.
i <3 pancakes and i had really missed them for awhile lol.

I second Ms Chevious here, that you should probably turn the heat down to medium (and any distractions OFF) once you get the skillet hot. For my cast iron, I use a spray oil and I must spray it once every two pancakes.
Also -- if your pancakes stick to the skillet despite spraying, add more flour.
if your pancakes are too thick, add more rice milk.
If your pancakes are gunky but not raw, then add less applesauce or more applesauce if they come out too crispy.

My kids make these all the time as an after-school-snack - and I've noticed they have better luck using a Teflon-style non-stick pan and some spray oil like "Pam".
Making sure the temp isn't TOO hot will help too.

We made these this morning and put shredded apple in them (didn't have quite enough applesauce), also some cinnamon. They were SOOOO yummy. Just thought I'd mention it as another variation. (Hey, I live in Washington, we add apples to everythng...)

You've just got the heat too high. The outside is cooking to quickly before the heat can cook the centre. Like others have said, just turn the heat down. I would use an electric or stovetop frypan for this recipe, if I were using gas I'd have it on low at least some of the time, or medium.
