My first recommendation, Alex, would be to buy flour from the bulk section. It doesn't cost as much as pancake mix (as low as 59 cents/lb.) and it generally makes pretty good pancakes.
Be aware also that buckwheat flour is different than wheat flour. When using different flours, the amount of liquid needed will vary and keeping the heat low enough that they can cook all the way through becomes more important.

I made these a couple days ago at home using Sears Pancake Mix ...
....
....I tried making them using Arrowhead Mills Buckwheat Pancake & Waffle Mix ....and they didn't quite turn out....
.....
....Has anyone else figured out how to solve this problem?

I think maybe they were asking why the one pancake mix worked, but not the other. (?)

I finally got the chance to try this. I am eating them right now. They are so good. I used white pastry flour, because I couldn't find whole wheat. But wow, I never made pancakes like this before. :D

I made these this morning! They are awesome! I got about 7 small/medium-sized ones out of the whole recipe. ate like 2.5, then froze the rest for breakfasts next week. Here are some pictures:

I just printed this recipe for my daughter to take to a friends... she wants to make pancakes for them tomorrow morning and LOVES this recipe! :)

Interesting you should ask. I did try these with brown-rice flour just a couple days ago (it was on accident, I thought I was using another kind of flour.)
I don't normally cook gluten-free, but I'm thinking brown-rice flour is gluten free, correct?
They turned out OK... a little flat and slightly oily maybe? but that might have been due to too much liquid or something else. They held together in a "pancake" shape though... It'd be worth a try!

I just made these as waffles tonight for supper and they're great!! I used pumpkin puree instead of applesauce too. Yum.
