NCBeachboy; I make two batches and it feeds myself and three hungry kids just perfectly.
It depends on how large you make the pancakes of course, but I would estimate about 6 pancakes per batch?

My daughter had to do a cooking demonstration for home-ec today and she made these pancakes! The teacher stopped me after class and said she was impressed - she didn't "know" you could make pancakes without eggs... heehee.. (Hmmm...maybe I should post this in the "Stupid Things Omnis Say..." thread)

ahh sometimes my pancakes turn out raw on the inside if i try to watch tv while making them.

i <3 pancakes and i had really missed them for awhile lol.

Yup, slightly lower heat, thinner batter or smaller pancakes. Don't forget to oil the pan either.

I jst made these....

I used ww. flour..instead of ww pastry flour since I can't find that over here..and had to use a bit more soymilk and applesauce..
I got about 4 1/2 pancakes out of one batch.
They are excellent:D Nice and fluffy and the applesauce gives it a nice subtle flavour..
Tomorrow: French Toast:D

Mmmm... my kids suprised me today with "breakfast in bed" (Well, almost) I actualy smelled food cooking and got up to see what was happening...

Anyway, they didn't have any applesauce so they mushed up a banana - then they remembered I didn't care much for bananas so they added cocoa powder to cover the taste I guess? .... well, the end result was VERY dark chocolatey but sooooooooooo good!! Served with raspberries and non-dairy whipped 'cream'. (*gasp*) I may have to sleep in EVERY Sunday morning...

My six-year-old learned to make pancakes today with this recipe - with a little adult supervision for the hot stove - otherwise she made them all by herself.

Just posting this for all of those who are afraid they aren't such good cooks...

I figure if a SIX year old can make them, anyone can.

I don't think I've had pancakes since the day I tried putting NRG Egg Replacer in my Bob's Red Mill 10-grain pancake mix. Boy, was that a disaster. Don't try it at home, kids! That was probably over a year ago. The damn pancake mix is still sitting in my pantry...

*makes mental note to enjoy vegan pancakes that are actually edible in the near future*

Thank you so much for this pancake recipe. My daughter and I have just gone vegan after many years vegetarian and are still finding our feet. Getting over the no egg and dairy is a bit of a challenge but not that hard. Thanks will make these this week and maybe have it with the newly found tofu icecream.

i'm not a huge pancake fan (more of the tofu scramble, fakin' bacon type) but my husband loves pancakes and since going vegan (me, not him) i've tried a few times using various recipes to make him some and i fail miserably everytime. my esteem is waning and his desire to try my latest effort is as well....with this recipe i shall make one more attempt at pancake success!

* not sure why the dramatics tonight, but there you have it :)

BethanY; Not sure why you haven't had any luck with vegan pancakes - they're usually pretty easy. This recipe should work - it's one of the easiest and most reliable that I've found (I could be slightly biased :smitten: ).

If you or your hubby are expecting the light puffy white-flour buttermilk "Aunt Jemima" style pancakes of your non-vegan days, well, you may not get exactly the same thing; but I can tell you, this recipe makes good pancakes and every NON-vegan I've ever made them for has come back for seconds (and thirds, and...).

yep, i guess that would be why! no, there's still more to it though (i think/hope) because the one's i've tried to make are so dense(?) the insides never fully cook. i'll try this recipe next time, it's got such rave reviews.

One thing I need to tell you, BethanY, is that these pancakes are a little thick, but they cook all the way through. One recommendation I can make to you is to adjust the amount of soymilk (or other "milk") you use so that the batter is a just a little runny. Another note for making adjustments is that it's the applesauce that keeps these things from becoming crispy.

Betheny; I'm not a huge "whole wheat" fan myself, but I tried these on TnS's recomendation.

Since I don't bake a lot, I didn't have whole wheat pastry flour on hand, and I didn't have a lot of regular whole wheat flour... so I used half white (*gasp!!*) and half whole wheat flour.

They were prolly a little more 'dense' than those pancakes you get at the IHOP, but they did cook up pretty fluffy and not at all undercooked.
I used a non-stick skillit and cooking spray (ooops, is that a bad thing here? I'm ignorant) and they actually were slightly "crispy" on the outside - or at least not soft.

Synchronicity! Yesterday, I was out of my home-made bread, and didn;t have any yeast. I experimentally mixed some rolled oats, whole wheat flour, sugar, and cinnamon together, coarsely grated an apple into it, and added enough water to make a thick, gloppy batter- almost a dough. I cooked them on a non-stick griddle over medium-low heat. VERY tasty, and probably healthier than many sweet things I could have gorged on. I didn't use that much sugar.

I am glad they turned out great for you, Ariel! Pancakes were one of the first things I wanted to try to veganize when I went vegan. :)

I made these a couple days ago at home using Sears Pancake Mix (Yeah, it has a little bit of buttermilk in it...), and they turned out AMAZING. They were better than when my dad makes them with eggs and whole milk and everything. They cooked all the way through and their texture was this perfect balance between dense and fluffy. Today, when I got back to my dorm, I tried making them using Arrowhead Mills Buckwheat Pancake & Waffle Mix (Main Ingredients: Buckwheat Flour, Whole Wheat Flour, Soymilk Powder), and they didn't quite turn out. The first thing I noticed was how much more moisture the flour absorbed. I had to add almost 3 times as much almond milk to get the consistency anywhere near liquidy enough to even pour the mix in the pan. Then, they didn't cook all the way through! The outsides browned beautifully, but the insides remained really doughy. I'm going to have to look for a different kind of flour, perhaps something more like a cake mix. Has anyone else figured out how to solve this problem?
